Producer Wilton Benitez has done it again! A pioneer of thermoshock processing, this lot sees Benitez ply his craft on a washed geisha. Moreover, Benitez grew this geisha on the flat terrain of the Cauca region, which graces the cherries with the consistent growing conditions required to produce an excellent cup. Combined with thermoshock processing, this resulting lot carries enhanced nutty flavours, great acidity—apparent in notes of lemon zest—and pronounced fruit flavour.
