How to make Yuzu Cold Brew using Specialty Coffee Concentrate

UTENSILS
- Scale
- Cocktail Shaker
- Jigger
- Martini glass (chilled)
- Plating tongs
* Can substitute for any citrus syrup or concentrate.
INGREDIENTS
- 190ml cold water
- 25ml (2 capfuls) Specialty Coffee Concentrate
- 20g yuzu syrup or concentrate*
- 5-10g sugar syrup
- Dash of lemon juice
- Dehydrated orange (to garnish)
- Ice
METHOD
1. Place the cocktail shaker on the scale with ice inside and tare.
2. Use the scale to add 190ml of cold water.
3. Add the remaining measured ingredients to the shaker exempting the garnish. The beverage should weigh approx. 250ml.
4. Close and shake the shaker well for min. 15 seconds until the mixture achieves a nice foam.
5. Pour the mixture into the chilled martini glass.
6. Garnish with dehydrated orange or citrus and enjoy!
