Bourbon Aji is a pour-over’s dream, and a producer’s boldest choice given the variety’s small volume reputation. However, father-daughter duo Paola and Carlos Trujillo were up for the challenge thanks to their extensive production experience, and their farm’s pristine location high in the Caldono hills. The end cup could easily be mistaken for a geisha; it has bubbling fruit aromas, expansive passionfruit notes, and caramel undertones that build with each sip.
