Grown under Carlos' founding principles of 'food security, soil conservation, and coffee cultivation', the cherries at harvest were already highly aromatic and laden with sweetness. His daughter Paola then oversaw sorting, cleaning, and natural processing on raised beds over two weeks. A final omni-roast at Stitch seals in candied orange notes and rousing tropical fruit flavours.
