About the Bean
Producer Maria Rosa Oidor is the matriarch of the influential Pillimué family, who have been farming coffee in the Inzá region for three generations. On the small but mighty Los Nogales farm, Maria solely grows Pink Bourbon due to its ability to produce elegant and floral cups. After hand-harvesting, Maria processed this lot on the hillside farm’s onsite micro-mill. Post-pulping, the beans underwent a 36-hour fermentation and wash before drying 6-10 days on raised beds. This final step allowed to lots to develop its sweet and complex flavours.
