About the Bean
A special microlot produced by one of our favourite farmers—Andre Hakizimana! A true custodian of Rwandan specialty coffee production, Hakizimana pulled out all the stops to create the cup before you today. As a member of the Dukunde Kawa cooperative, Hakizimana could employ the impressive Mblima washing station to process his 100% organic Red Bourbon cherries. Post-sorting, the ripest cherries were pulped, pre-washed, fermented (12-18 hours), graded and fermented again (6 hours) to develop a profile with sweet apple notes, distinct acidity, and a well-rounded, clean finish.
