Complex and distinct, with tropical acidity and a rich body.
Yaye is a washing station found in the kebele (local village) of Chericho, and is managed by Testi Coffee, founded by Mr Faysel A. Yonis.
This coffee lot was produced as part of Testi’s QC initiative, Premium Cherry Selection (PCS). Testi pay a premium to farmers who pick and deliver only the ripest cherries from their farms.
This coffee was processed using anaerobic fermentation and the natural method. Each day, hand-picked cherries were delivered to the wet mill and hand-sorted. The cherries were then packed into polyurethane tanks and sealed shut to ferment without oxygen (anaerobically).
