Laden with sweetness and innovation-driven, this cherry bomb of a coffee represents the latest advances in natural processing. The El Encanto family project pulled out all the stops with this caturra-chiroso blend, adding clarity and complexity to the final cup. We’re talking 70-hour oxidation, 60-hour anaerobic fermentation, yeast inoculation derived from fruit pulp, and a quick thermal shock before 48-hour mechanical drying. This unique mix of creative processing and traditional cherries yields a superbly jammy experience. Expect notes of baked fruit and enchanting undertones of dark chocolate.

Regeneration is at the forefront of Kibingo washing station, whose capacity to process 750,000kg cherries daily is made possible by its farmer outreach programs. Its subsidised coffee seedling service greatly supports Burundi smallholder farmers, including the 1,739 producers who contributed to this Bourbon lot. After harvest, the cherries were pulped and fermented with Intenso yeast for 96 hours. This inoculation enhanced the expression of fresh fruit characteristics in the cup. A final wash and 10–14 day drying period completes the lot’s transformation into a highly aromatic coffee with smooth grape flavour.

Bolivian pride and the nation’s knack for producing exceptional coffee are on full display in this Caturra lot. Named after the national animal, La Llama farm is notable for its awe-inspiring landscape, biodiversity practices, and clean coffees. Waiting until the cherry was almost purple (at its ripest), this lot was hand-plucked, pulped, fermented, washed, and then dried in a guardiola for 110 hours to produce one of the cleanest cups to ever grace our singles rotation. Anticipate blossoming coffee aroma, sweet citrus notes, and delightfully nutty flavour.
