    Carefully picked, expertly sorted, and gently de-caffeinated, this low-caf coffee is all about flavour without compromise. Ripe cherries are harvested, sorted, and pulped before undergoing a natural decaffeination method using solvents derived from coffee pulp, removing approximately 95% of the caffeine while preserving intrinsic flavour compounds. The coffee then undergoes a 96-hour sourdough-based fermentation followed by an 8-day controlled drying phase to achieve optimal moisture stability. The result is a clean, expressive cup with distinct fruit-driven characteristics.
