We cherish Hernandez’s lots for their delicate flavours, which are first formed in the cherries with assistance from the region’s unique microclimate, and then further developed under his meticulous washed processing methods. After harvest, a 24-hour fermentation and shade-drying process results in this succinct cup full of peach notes, a subtle sweetness, and a floral aroma.
