Thekebele (village) of Bombe is home to Ayla washing station; named after the owner Faysel’s niece, the station is known for producing superb cups full of vibrant acidity and clean flavour. Faysel’s practice of paying premiums for quality ensures that only the best, slow-ripened cherries from local independent growers are delivered to the station. Upon arrival, these cherries were sorted, pulped, graded, and washed for 36–48 hours using fresh water from the Bonora river. The result of all these efforts is an exquisite Grade 1 lot with a fragrant, tea-like body and fruit-forward taste.
