When a geisha microlot results from a collaboration between a prestigious producer, roaster, and former World Barista Champion, you know it’s going to be good. Industry veterans Jamison Savage, Elvin Siew, and Sasa Sestic formed Iris Estate to produce research-driven coffees that bring together the best of natural terroir and extreme elevation in order to achieve lots of astounding cup quality. Their success is written in this geisha—an anaerobic natural where a 100-hour fermentation of high-sugar cherries resulted in a crisp coffee profile of reverberant fruit notes and a perennial floral finish.
ABOUT THE FARM
Iris Estate sits on the west-facing hillside of Panama’s historic Volcán Barú, where the farm is fully integrated within the area’s natural rainforest. All varieties planted here are done so without impacting the existing biodiversity, a move on the co-producers’ part to maintain a sustainable approach to coffee. All the while ensuring that lots from Iris Estate are true reflections of the rich environment they were grown in.
