    When legacy production meets the cloud-kissed mountains of Boquete, you get exquisite geisha lots like this. Finca Silvia Marina is a verdant estate helmed by award-winning specialty coffee company Kotowa and its father-daughter duo, Ricardo and Victoria Koyner. Kotowa means “mountain” in Ngäbere, and this cup earns the name: the kind of sweetness only slow maturation at altitude delivers. The cherries were handpicked, fermented for 24 hours, washed, and then dried on raised beds for eight days and statically for four. The result is delicately complex — citrus, stonefruit, and an aromatic chamomile finish.
